Antipasto is the traditional first course of a formal Italian meal. It is usually made up of olives, artichokes, meats, and cheeses. Its purpose is to stimulate the appetite--therefore we have combined many of the tasty offerings of an antipasto into a pasta salad that will surely stimulate your appetite!
INGREDIENTS:
Sarah Beth's Homemade Dips Robust Italian Dressing & Marinade Mix
2/3 C apple cider vinegar
1 1/2 C vegetable oil
1/4 C water
1 lb. box Rotini pasta
fresh Parmesan cheese
For the following, use as much as you like:
artichoke hearts, drained and halved lengthwise
Kalamata olives, drained
Italian dry salami (or salami of your choice), cut
fresh mozzarella cheese, cut into cubes
roasted red peppers, drained and sliced
grape tomatoes, halved
red onion, sliced
DIRECTIONS:
- Prepare dressing mix as directed on package. Chill until ready to use.
- Boil pasta until al dente. Strain and let cool. Do not rinse.
- While pasta is boiling, prep olives, salami, mozzarella, roasted red peppers, grape tomatoes, and red onion.
- Place pasta and prepped ingredients in large bowl. Pour dressing over and mix well.
- Refrigerate for at least an hour. Add more dressing, if desired, before serving.
- Serve with fresh grated Parmesan cheese.
